Kaeshi with Udon

This past weekend, I was trying to figure out what to make to accompany my girlfriend's lovely pan seared salmon. In the freezer were several packages of udon noodles but I couldn't find any sauce to go with it. After scouring on the internet I was luckily able to find a recipe for Kaeshi (a sauce to compliment cold noodles such as udon or soba) that was both easy to make and great tasting!

Throw in some udon, a little bit of green onion (some finely diced ginger if you want), and it's time to eat!

Combine with some chilled udon or soba noodles and the dish is ready to eat. My noodle of preference is udon noodles because they have a thick and deliciously chewy texture. Note that when using the Kaeshi I like to add cold water 1:1 to the amount of Kaeshi I pour out into a bowl to prevent the sauce from being too strong, overly sweet and too salty.

Kaeshi: (Adapted from 6 Cup recipe - adjusted in proportion)
  • 2 cups of good quality dark soy sauce
  • 1/3 cup of mirin
  • 1/3 cup of granulated white sugar

Put the mirin in a pan and bring up to the boil; lower the heat and let simmer a bit to evaporate much of the alcohol content.

Add sugar and stir until melted. Add the soy sauce, and let it warm up slowly, stirring. It should never boil - once it starts barely bubbling, take it off the heat.

Save extra kaeshi for future use.

Baking Time

Finally had a chance to update the blog after a whirlwind of things consuming the time in my life. Oddly as it sounds, spending 20-30 minutes mixing stuff together to make a delicious baked good was the most calming and yet best part of my day during a hectic work week. I ended up putting together 4 dozen mini pumpkin cupcakes (1/2 went to my gf) and the other 1/2 is slowly being devoured in my household.


The plate looks empty because I was hungry taking the picture haha
